Our Tagines and Stew Pots on Cookable Clay
Clay pots and low-temperature slow cooking bring out incredible flavors in any dish, whether traditional North African or a contemporary creation.
We’re making our Cookable Tagine with a new, deeper base for large meals. The base of our 30cm (12″) can fit a whole chicken or a tagine stew for four people and holds about 2.5 liters. We are not going to make our Serving Clay Tagine anymore.
Our Cookable Tagine is designed for stove-top use (gas or electric), but was traditionally used over charcoal. Because of clay cookware’s sensitivity to high heat, we recommend using a diffuser and the low setting on your stove for slow cooking. We make our clay diffuser for use with our tagines. Some stores and websites will include our diffuser with each tagine, others will not, so please consult the store or website directly about it. Our clay diffuser is intended for use on gas or electric stovetops but it will scratch glass or ceramic tops. So please be sure to use a diffuser that is suited for your stove.
Our Tagines can be used in the oven (350 degrees or lower, 175 Celsius), but usually without the lid as a way to finish off or brown the meal. “Real” tagine recipes do not normally call for oven baking with the lid, but we do encourage novel and creative use, so please let us know if you come up with a delicious new recipe or technique.
